Vegan Peppermint Cake

Vegan Peppermint Cake
The cake is super delicious and
perfect for the holidays!
It’s vegan and simple to make.
I definitely recommend it.


Cake Ingredients:
- 1 ¼ c almond milk
- 1 tbsp lemon juice
- 2 cups flour
- 2 tsp baking powder
- pinch of salt
- ½ cup vegan butter
- ¾ sugar
- 2 vegan egg substitutes (I used http
- 1 tsp vanilla
- 2 tsp peppermint extract


Vanilla Frosting Ingredients:
- 2 tbsp vegan butter
- 2 cups powdered sugar
- 1 tsp vanilla
- 3 tbsp almond milk


Peppermint Frosting Ingredients:
- ½ tbsp vegan butter
- ½ cup powdered sugar
- 1 tsp peppermint extract
- 1 tbsp almond milk
- drop of red food coloring (optional)


Instructions:
1. Mix together the almond milk and lemon juice. Set aside for
15 minutes (to curdle).
2. Whisk together the flour, baking powder, and salt. Set aside.
3. Cream together the vegan butter and sugar.
4. Mix in the egg substitutes and extracts.
5. Alternate adding in dry, wet, dry, wet, dry to the butter mixture.
6. Pour into 2 greased and floured 9” baking pans. Bake at 350
degrees F for 20-25 minutes.
7. Mix together the frosting ingredients (each frosting in a
separate bowl).
8. Decorate cake once it has cooled completely and enjoy!

Vegan Peanut Butter Chocolate Cake

Vegan Peanut Butter Chocolate Cake
The cake is insanely delicious and
has a decadent chocolate flavor!
It’s vegan and easy to make.
I recommend trying this out whether for
it’s great flavor or the fun experience!


Cake Ingredients:
    - 2 cups all-purpose flour
    - ¾ cup unsweetened cocoa powder
    - 2 teaspoons baking powder
    - 1½ teaspoons baking soda
    - pinch of salt
    - 1 cup hot water
    - 1-2 teaspoons espresso powder
    - ½ cup oil
    - 1 ⅓ cup sugar
    - 2 flax eggs
    - 1 tbsp vanilla
    - 1 cup almond milk

Peanut Butter Frosting Ingredients:
    - 1 tbsp vegan butter
    - ⅓ cup peanut butter
    - 1 cup powdered sugar
    - 1 tsp vanilla
    - 1 tbsp almond milk


Chocolate Frosting Ingredients:
    - 2 tbsp vegan butter
    - 1 tsp vanilla
    - 1 cup cocoa powder
    - 1 cup powdered sugar
    - 1 tbsp almond milk

Instructions:
1. Mix together the flour, cocoa powder, baking soda, baking
powder, and salt. Create the coffee in a separate mug
(combine the water and espresso powder).
2. In a separate bowl, whisk together the oil and sugar.
3. Mix in the flax eggs and vanilla.
4. Filter in your coffee (to make sure there are no granules
left) and mix that in.
5. Alternate adding in ⅓ dry, ½ cup milk, ⅓ dry, ½ cup milk, ⅓ dry.
6. Separate into 3 eight-inch cake pans and bake at 350 F
for 20-25 minutes.
7. While baking, cream and whisk together the vegan butter,
peanut butter, and vanilla. Add in the powdered sugar. Mix in
almond milk until you get the desired consistency (around 1 tbsp).
8. Cream the vegan butter together with the vanilla. Add in the
cocoa powder and powdered sugar. Mix in the almond milk
until you get the desired consistency (around 1 tbsp).
9. Frost the cakes once they have completed cooled (peanut
butter in between & as decor, chocolate as the outside). Enjoy!

Fast & Fat-Free Dough Cinnamon Rolls
Fast & Fat-Free Dough Cinnamon Rolls!
These taste amazing and are a vegan, faster, and
healthier version then classic cinnamon rolls.

    Ingredients:
          2 cups flour
          1 ½ tbsp baking powder
          2 tbsp sugar
          ¼ cup water
          1 tsp vanilla
          ½ cup almond milk
          ½ cup brown sugar
          ½ tbsp cinnamon
          1 tbsp vegan butter
          ~~~~~~~~~~~~~~~
          1 tbsp vegan butter
          ¼ powdered sugar
          1 tsp vanilla
           ⅛ - ¼ cup almond milk

    Instructions:

1. Mix together the flour, baking powder, and sugar.

2. Slowly add in water, vanilla, and almond milk.
It will get hard to mix with a spatula so use your hands to
incorporate in the liquids to form a dough ball.

3. Roll out the dough ball on a lightly floured surface until
it's about 1/4 of an inch thick. Spread the vegan butter
on top of the dough. Then, sprinkle in the cinnamon-sugar
mixture.

4. Roll up the dough from the wide side and cut into 12 even slices.

5. Bake at 400 F for roughly 12 minutes.

6. In a small mixing bowl, smush the vegan butter with a fork
until fluffy. Then, add in the powdered sugar and vanilla.

7. Slowly add in the almond milk until you get the desired
icing consistency.

8. Pour the icing over the cinnamon rolls when they are finished
baking. Let them cool and then enjoy!!
