Chocolate Mug Cake

Perfect for when you want a chocolate treat quickly, this mug cake takes
such little time to make but comes out with a great result.

Ingredients:
2 tbsp flour
2 tbsp cocoa powder
2 tbsp white sugar
1/4 tsp baking powder
1 tbsp olive oil
3 tbsp almond milk
1/2 tsp pure vanilla extract
2 tbsp vegan chocolate chips

Instructions:
1. Whisk together the dry ingredients in a mug.
2. Pour the wet on top and mix to combine.
3. Fold in the chocolate chips.

4. Cook in the microwave for one minute and enjoy!

The Best Marinated Tofu

This decadent dish is the perfect addition to so many dinners or lunches.
The tofu comes packed with so much flavor and is a family-favorite.

Ingredients:
10 oz firm tofu, diced
1/4 cup water
2 tbsp soy sauce
1 tbsp apple cider vinegar
1 tbsp maple syrup
1 tsp garlic powder
1 tsp cornstarch

Instructions:
1. Mix all ingredients except the tofu until well combined.
2. Add the diced tofu into the dish and cover it with plastic wrap. Let
sit in the fridge for 30 minutes.

3. Strain the tofu and then sautée it in a pan until golden-brown.

Cinnamon Swirl Bread

This cinnamon swirl bread is a no-yeast recipe so it is very fast to 
Prepare, but it still comes out with a wonderful flavor! I definitely
recommend trying this one out.

Ingredients:
1/3 cup brown sugar
2 tsp cinnamon
2 cups flour
2 1/2 tsp baking powder
1/2 tsp salt
1/2 cup white sugar
1/2 cup brown sugar
1 cup almond milk
1 vegan egg substitute
1/3 cup vegetable oil

Instructions:
Preheat oven to 350°F (175°C) and grease and flour a 9x5-inch loaf pan.
1. In a small bowl, combine brown sugar and cinnamon. Set aside.
2. In a medium bowl, whisk the flour, baking powder, salt, and sugars.
3. In a large bowl, combine milk, egg, and vegetable oil.
4. Add the flour mixture to the bowl.
5. Pour half the batter into a greased and floured 9x5 inch loaf pan.
Sprinkle half of the cinnamon-sugar mixture on top. Then pour the
Remaining batter on and sprinkle with the remaining cinnamon-sugar.
6. Use a knife and draw the cinnamon-sugar through the batter to swirl it.

7. Bake for 50 minutes at 350 F degrees.

Mint Chip Cookies

A unique and delicious dessert perfect for all year round, these mint
chip cookies are such a creative idea! They always disappear from the
kitchen so fast because they’re such a favorite.

Ingredients:
1 1/2 cups flour
1 tsp baking soda
1/4 tsp salt
1/2 cup vegan butter
1/2 cup brown sugar
1/4 cup white sugar
1 vegan egg substitute
1/2 tsp pure peppermint extract
1 1/2 cups mint chips

Instructions:
1. Whisk together the flour, baking soda and salt.
2. In a large bowl, beat the butter and sugars until combined.
3. Mix in the egg and peppermint extract. Then the dry ingredients.
4. Fold in the mint chips.
5. Scoop about 2 tbsps of dough onto two lightly greased baking sheets.

6. Bake at 350 F degrees for 8 minutes. Cool before enjoying!

½ cup cooked brown lentils
1 tomato
⅓ cucumber
½ avocado
2 tsp olive oil

Instructions:
1. Chop the tomato, cucumber, and avocado into bite size pieces.

1 1/2 cup almond milk

1. Whisk together the flour, cocoa powder, baking soda, salt, and sugar.
2. In a separate bowl, stir together the applesauce, almond butter, 
almond milk. And vanilla extract.
3. Combine the mixtures and stir in the chocolate chips.

4. Pour into two greased 8 inch pans. Bake at 350 F for 25 minutes.

This zero-waste carrot soup is not only environmentally friendly,
but tastes amazing and is a perfect dinner staple. It is affordable

Ingredients:
2 tbsp olive oil
1 tbsp flour
1 cup almond milk
2 cup vegetable broth**
3 cups chopped carrots (skin on)
Sprinkle of Thyme, Oregano, Salt, and Pepper to taste

Instructions:
1. Whisk together the oil, flour, milk, and broth until it’s at a boil.
2. Boil the carrots until soft. Add spices.
3. Purée the soup with an immersion blender. Enjoy!

butter banana bars are a delicious and nutritious treat! They’re super
simple to make and are vegan.

Ingredients:
1/4 cup olive oil
3/4 cup almond butter
1/4 cup ground flaxseed
2 smashed bananas
1 tsp baking powder
1/4 tsp salt
1 1/4 cup old fashioned oats

Instructions:
1. Mix together the olive oil, almond butter, flaxseed, and bananas.
2. Stir in baking powder, salt, and oats.
3. Pour batter into an 8 inch pan.

4. Bake for 25 minutes at 350 degrees F and allow to cool before enjoying.

Vegan Carrot Cake

For any fans of carrot cake, I definitely recommend trying this recipe.
It has a nice bit of spice to it that really compliments the carrot flavor.

Ingredients:
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
2 and 1/3 cups Grated Carrot
1 brown sugar
2 vegan egg substitutes
1/2 cup olive oil
1 tsp vanilla 
1 Tbsp apple cider vinegar

Instructions:
1. Sift the flour, baking powder, baking soda, salt, cinnamon and
nutmeg into a mixing bowl.
2. Add the grated carrot and the brown sugar.
3. Add the oil, vanilla, flax eggs, and apple cider vinegar.
4. Mix everything and let it sit for 5 minutes.
5. Bake at 350 F degrees for 30 minutes in 2 lightly greased cake pans.
Let the cakes cool before frosting and enjoying!

Quinoa Crumble Meat

This quinoa crumbled meat is a great substitute for so many traditional
dishes- lasagna, tacos, sandwiches, and more! Besides tasting incredible,
it is very realistic and a favorite addition to many meals according to
multiple meat eaters. I definitely recommend trying this!

Ingredients:
1 cup quinoa
1 cup vegetable broth
3/4 cup water
1/2 cup salsa
2 tsp cumin
2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp each salt & pepper
1 Tbsp olive oil

Instructions
1. Over medium heat, toast rinsed quinoa for 4-5 minutes.
2. Add water and vegetable broth. Bring to a boil.
3. Cook at low for 20 minutes and then rest for 10 minutes without heat.
4. Add cooked quinoa to a mixing bowl and add remaining ingredients.
5. Spread on a lightly greased baking sheet.

6. Bake for 30 minutes at 375 F degrees. Enjoy!

Budget-Friendly Indian Dal Soup

Indian Dal Soup is one of my favorite dishes, but I always thought
it so complex to make. I started experimenting around and came up
with a recipe that is not only delicious and simple to make, but also
budget friendly, as it has very few ingredients!

Ingredients:
1 cup red split lentils
3 cups water
1 tsp salt
1/2 tsp turmeric powder
3/4 tsp red chili powder
½ tbsp lemon juice

Instructions:
1. Soak the lentils in water for 15-20 minutes.
2. Transfer to a pot and add all other ingredients.

3. Cook on medium high heat for about 30 minutes. Enjoy!
