Healthy Chocolate Cake

A healthier alternative, this chocolate cake tastes amazing and has 
an extra kick of flavor. I definitely recommend trying to vegan recipe out.

Ingredients:
2 cups flour
3/4 cup unsweetened cocoa powder
1 tsp baking soda
1 tsp salt
1 cup chocolate chips
1 1/2 cup sugar
1/2 cup applesauce
1/2 cup almond butter
1 1/2 tbsp pure vanilla extract
1 1/2 cup almond milk

Instructions:
1. Whisk together the flour, cocoa powder, baking soda, salt, and sugar.
2. In a separate bowl, stir together the applesauce, almond butter, 
almond milk. And vanilla extract.
3. Combine the mixtures and stir in the chocolate chips.

4. Pour into two greased 8 inch pans. Bake at 350 F for 25 minutes.

Zero-Waste Carrot Soup

This zero-waste carrot soup is not only environmentally friendly,
but tastes amazing and is a perfect dinner staple. It is affordable
and vegan!

Ingredients:
2 tbsp olive oil
1 tbsp flour
1 cup almond milk
2 cup vegetable broth**
3 cups chopped carrots (skin on)
Sprinkle of Thyme, Oregano, Salt, and Pepper to taste

Instructions:
1. Whisk together the oil, flour, milk, and broth until it’s at a boil.
2. Boil the carrots until soft. Add spices.
3. Purée the soup with an immersion blender. Enjoy!

**using a homemade vegetable broth will make this zero-waste

Healthy Almond Butter Banana Bars

Perfect for a snack or addition to a balanced breakfast, these almond
butter banana bars are a delicious and nutritious treat! They’re super
simple to make and are vegan.

Ingredients:
1/4 cup olive oil
3/4 cup almond butter
1/4 cup ground flaxseed
2 smashed bananas
1 tsp baking powder
1/4 tsp salt
1 1/4 cup old fashioned oats

Instructions:
1. Mix together the olive oil, almond butter, flaxseed, and bananas.
2. Stir in baking powder, salt, and oats.
3. Pour batter into an 8 inch pan.

4. Bake for 25 minutes at 350 degrees F and allow to cool before enjoying.

Vegan Carrot Cake

For any fans of carrot cake, I definitely recommend trying this recipe.
It has a nice bit of spice to it that really compliments the carrot flavor.

Ingredients:
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
2 and 1/3 cups Grated Carrot
1 brown sugar
2 vegan egg substitutes
1/2 cup olive oil
1 tsp vanilla 
1 Tbsp apple cider vinegar

Instructions:
1. Sift the flour, baking powder, baking soda, salt, cinnamon and
nutmeg into a mixing bowl.
2. Add the grated carrot and the brown sugar.
3. Add the oil, vanilla, flax eggs, and apple cider vinegar.
4. Mix everything and let it sit for 5 minutes.
5. Bake at 350 F degrees for 30 minutes in 2 lightly greased cake pans.
Let the cakes cool before frosting and enjoying!

Quinoa Crumble Meat

This quinoa crumbled meat is a great substitute for so many traditional
dishes- lasagna, tacos, sandwiches, and more! Besides tasting incredible,
it is very realistic and a favorite addition to many meals according to
multiple meat eaters. I definitely recommend trying this!

Ingredients:
1 cup quinoa
1 cup vegetable broth
3/4 cup water
1/2 cup salsa
2 tsp cumin
2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp each salt & pepper
1 Tbsp olive oil

Instructions
1. Over medium heat, toast rinsed quinoa for 4-5 minutes.
2. Add water and vegetable broth. Bring to a boil.
3. Cook at low for 20 minutes and then rest for 10 minutes without heat.
4. Add cooked quinoa to a mixing bowl and add remaining ingredients.
5. Spread on a lightly greased baking sheet.

6. Bake for 30 minutes at 375 F degrees. Enjoy!
